The weakness and strengths of sanitary inspections in improving food safety and hygiene in commercial restaurants in Rwanda

Abstract
This study aimed at assessing the weakness and strengths of sanitary inspections in improving food safety and hygiene in commercial restaurants in Rwanda. A descriptive cross-sectional study was carried out on 30 commercial restaurants in Rwanda from which 30 managers, 30 food handlers and 30 clients were randomly selected. Data collection was done using a structured questionnaire, observation checklist and document review checklist which were tested for validity and reliability prior to actual data collection procedure. Data were analyzed using Statistical Package for Social Sciences (SPSS) version 20 to compute descriptive statistics and linear regression. The study found out that sanitary inspections improved food safety and hygiene in commercial restaurants (r=0.641, p<0.01). The study recommended that the Ministry of Health should reinforce the inspection technical guidelines and strengthen the inspection team through continuous professional development and training. Moreover, there is a need to increase the number of health inspectors and improve their remuneration, thus attracting more qualified and competent candidates.
